Lemon is one of the most quintessential flavors of spring and it’s one of our favorite flavors here at Lifeway. We prepped up some easy overnight oats with lemon zest, lemon juice, poppy seeds for crunch and flavor, chia seeds, and rolled oats, then mixed all these ingredients with Plain Lifeway Kefir. - 1 cup Lowfat Plain Kefir
- 1/2 cup rolled oats (use gluten-free if desired)
- 1 tbsp. chia seeds
- 1 tbsp. lemon juice
- 1 tbsp. lemon zest
- 1 tsp. poppy seeds
- 1 tbsp. pure maple syrup
- Toppings: fresh strawberry slices, additional lemon juice, shredded coconut, etc.
Directions
- In one or two mason jars or glasses, add the Lifeway Kefir, oats, chia seeds, lemon juice, lemon zest, poppy seeds, and maple syrup. Stir together until everything is combined and let the overnight oats set in the fridge overnight to set (or at least 6 hours).
- The next morning or 6 hours later, add fresh strawberry slices on top and a squeeze of lemon if desired. Add more syrup or another sweetener if you want it sweeter, and add any other toppings you prefer (shredded coconut, hemp seeds, sliced almonds, etc.). Enjoy!
